Guyot simple & double

There are a number of ways to trim the branches, but we use the ‘Guyot’. Depending on the ‘terroir’ we use either the Guyot simple or the Guyot double. This way we cut all of be branches except one (simple) or two (double). We select the best branch from last year and cut it of after the eighth bud. After that it is bound to a horizontal wire so that it’s arched.
